Shepherd-Less Pie Deconstructed

Our lovely F&F Ambassador Nina, shares her hearty, filling, protein and veggie-packed dish — Shepherd-Less Pie Deconstructed!

If you're looking for an easy weeknight dinner to meal prep for the week, this is it! Follow the recipe below.

Recipe Ingredients (Serves 4)

  • 1 tsp olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3 tsp cumin, 1 tsp each smoked paprika, ground coriander + chipotle powder, 2 tsp dried oregano
  • 1 can diced tomatoes
  • 1 cup veggie stock
  • 60g Plant Based Meat 
  • 1/4 tsp cinnamon
  • 1 zucchini, diced
  • 2 carrots, diced
  • 1 can chickpeas
  • 2 tsp soy sauce or tamari
  • Juice of 1/2 a lemon

Method

  1. Heat olive oil in a pan, then add onion and sauté until golden.
  2. Add garlic, tomato paste and spices. Sauté until fragrant, then deglaze pan with the veggie stock.
  3. Add in remaining ingredients plus an additional cup of water, bring to a simmer and cook for at least 30 minutes until thickened, but the longer the better!
  4. Season to taste and serve with mash (see the instructions below).

Instructions For The Mash

  1. Peel and dice 800g potatoes.
  2. Start cooking the potatoes in cold water.
  3. Cook until soft then mash with 2-3 tbsp Cashew Butter, pinch of nutmeg, 2-3 tbsp Nutritional Yeast, salt to taste and a dash of unsweetened plant milk.
  4. Whisk until smooth and creamy!
