Life in lockdown gives us the perfect excuse to cook, have fun and experiment in the kitchen. It gives us the opportunity to learn to make new dishes, more complex dishes and maybe meals we know take a bit longer to make, as we find ourselves having a lot of extra time up our sleeves.Β
Here at F&F, we love seeing meals veganised. So if you like the looks of this dish, read on to find out how you can make it! This recipe serves 2.
Ingredients
- Gnocchi: 500g potatoes - boiled until soft
- Gnocchi: 1 and 1/4 cups flour of your choice
- Gnocchi: 1 tsp salt
- Cheesy Vegan Sauce: Half head of cauliflower - boiled until soft
- Cheesy Vegan Sauce: 3/4 cup raw cashews - soaked for at least 30 minutes
- Cheesy Vegan Sauce: 1 cup Ulu Hye Almond Mylk
- Cheesy Vegan Sauce: 3/4 cup nutritional yeast
- Cheesy Vegan Sauce: 1/2 brown onion chopped finely
- Cheesy Vegan Sauce: 1 clove garlic chopped finely
- Cheesy Vegan Sauce: The juice of 1 freshly squeezed lemon
- Cheesy Vegan Sauce: Splash of tamari
- Cheesy Vegan Sauce: Salt and pepper to taste
- Cheesy Vegan Sauce: 1 handful vegan cheese
Steps | Gnocchi
1. If your potatoes aren't already peeled, go ahead and peel them then mash with a fork or potato masher in a bowl.
2. Add flour and salt, and mix with your hands to combine. Add a little more flour if you need to ensure your mixture isn't sticky.
3. Sprinkle some flour onto your bench and transfer your mixture onto the bench. Press mixture into a flat ball and cut into halves. Take one half and roll out into a thick rope, then cut into 2cm pieces.
4. Roll a fork over each piece to create ridges and repeat with the second half of the mixture. Once all complete, set aside.

5. Boil cauliflower until soft. Combine all sauce ingredients EXCEPT the vegan cheese into your blender, and blend on high until you have a smooth and creamy texture (no lumps).
6. Place in a saucepan along with the vegan cheese and on a low to medium setting, heat your sauce, stirring occasionally.
7. Fill a large saucepan with water. Add a pinch of salt and bring to the boil.
8.Drop the gnocchi in and remove once they float to the top.
9. Option to pan-fry them in a little olive oil or vegan butter.
10.Once your sauce has heated up, stir through your gnocchi and serve with fresh parsley. Enjoy!
