Vegan San Choy Bow

Ingredients

Serves | 3

  • 1 cup Vegie Mince
  • 1 cup hot water
  • 3/4 cup hoisin sauce
  • 2 diced carrotsย 
  • 50g water chestnut
  • 1 spring onion
  • Drizzle of sesame oil
  • Lettuce cups

Method

  1. Add 1 cup of vegie mince and 1 cup of hot water into a bowl. Soak for 10 minutes.
  2. Drain, then add 1/2 cup of hoisin sauce, mix together, then put aside.
  3. Dice carrot, water chestnut and spring onion.
  4. On a fry pan, drizzle sesame oil, then add carrot, water chestnuts. Mix.
  5. Add vegie mince, and more hoisin. Mix
  6. Add spring onion. Mix
  7. Prepare your lettuce cups.
  8. Spoon the mixture into each cup.
  9. Garnish with more spring onion.
  10. Serve and enjoy!
