Spice up your weeknight dinner meals, with this seriously good spicy curry noodles recipe. You can make this recipe in less than 30 minutes, making it an easy dinner meal for when you're wanting something fast. Follow the recipe below!

Ingredients
Serves | 4
- Alb-Gold Organic Mie Noodles
- 2 tbsp oil
- 3tbsp tamari
- 1 tbsp fresh ginger
- 2 heaped tsp curry powder
- 1 onion diced
- 1 zucchini
- 2 cup silverbeet
- 1 big handful of kale
- 1/4 cucumber (optional topping)

Method
- Add 2 tbsp of oil to a fry pan.
- Dice your onion and add to the fry pan.
- While the onion is starting to cook, chop the remaining veggies and grate 1tbsp of fresh ginger.
- Boil your noodles as per packed instructions.
- Next, add zuchinni, 3 tbsp tamari and 2 heaped tsp of curry powder. (If you want extra heat feel free to add in some chilli flakes here).
- Saute the onion and zuchinni for another few minutes, then add the remaining veggies and a splash of water to deglaze the pan. Mix.
- Drain and add your noodles into the pan, mixing until the spices coat the noodles evenly.
- Serve in a bowl. (Optional: add fresh cucumber on top for crunch).
