Quick & Easy Vegan Recipe | Mushroom Fried Rice

Ingredients

  • 4-5 cups of day old rice (this gives a nice texture to the rice if it's cooked the night before)
  • 3 cloves of garlic (finely chopped)
  • 500g mushrooms (chopped)
  • Handfull of fresh spring onion (chopped)
  • 3 tbls soy sauce
  • 1 cup of frozen vegetables (optional)
  • 1 tbls sesame oil (optional)

Steps

 
  1. Prepare rice the night before (1.5 cups of uncooked rice turns to 4-5 cups of cooked rice). Once cooked, put in fridge overnight
  2. Chop garlic, spring onion, and mushrooms
  3. In a large pan: spray with cooking oil and sauté garlic on low/med heat
  4. Add spring onions and mushrooms, turn heat up to medium. Cook for 3-5 mins or til mushrooms are cooked. Constantly moving the mushrooms around
  5. Add rice and vegetables and cook for 2-3 mins (the frozen veggies will thaw under the heat)
  6. Remove from heat, add 3 table spoons of soy sauce and 1 tablespoon of sesame oil
  7. Serve and enjoy

Pop your remaining four servings in a Lock & Lock Reusable, Microwave and Freezer Safe Container. Simply heat up a serving when your tummy calls.
