Healthy & Quick Miso Ramen Noodles with Vegie Mince

If you're looking for a healthy and quick meal for your weeknight, you have to try our ambassador Mon's, Miso Ramen Noodles with Vegie Mince. 
 
This savoury and (optionally) spicy bowl will warm you right up. It's so easy to make and you can customise it to your liking. Follow the recipe below!

Ingredients

Method

  1. Chop up veggies 
  2. Cut tofu into small squares
  3. Combine all ingredients in a large bowl
  4. When ready to eat, cover all ingredients with boiling hot water and cover with a lid.
  5. Leave for 3-5 minutes for the noodles to reach the desired texture
  6. Enjoy

Note: The Vegie Mince is like textured vegetable protein (TVP) so it will rehydrate and expand with the boiling water. This mince reminds Monz of a 'chickeny' style mince rather than the beef style mince that is common with TVP. So if that makes your tastebuds sing, we defintely think you will enjoy this recipe.
