Melinda's delicious Gingerbread Loaf Mix is a blend of high-quality ingredients and can be prepared as a loaf, slab cake or muffins. Add bananas or poached pears to vamp it up and serve warm with vegan butter or cream of choice.

Melinda's Gluten-Free Goodies started with a gluten-free slice premix and has since grown a range loved by busy parents, chefs, caterers and those with allergy and dietary requirements. They are constantly developing great quality gluten-free, allergy-friendly and vegan products.

- Preheat oven to 190°C (170°C fan-forced)
- Grease and line 21x11cm loaf tin, or an eight-hole mini loaf tin
- Empty contents of Gingerbread Loaf Mix into a bowl
- Add 80ml milk substitute of your choice (Soy, Oat or Almond), 2 mashed medium bananas and 125ml coconut oil. Stir until well combined.
- Pour into prepared tin
- Bake for 35-40 minutes or until firm to touch and cooked through
The box can be recycled. Any internal plastic packaging is soft plastic and can be recycled with REDCycle. There are drop off points at supermarkets around Australia - check the REDcycle website to find your nearest collection point.
Ingredients: Gluten free self raising four (maize starch, tapioca starch, soy four, rice four, raising agents (575, 501, 500), brown sugar, ginger (4%) and mixed spice

Didn't work for me
I love ginger and cake, so it was sad that this didn't work for me. Came out too dense and the ginger was so overpowering that it was hard to eat more than a few bites.Location

tasty, quick and easy to make
I love these, super quick and easy to make. Ive made them into a loaf and muffins. The gingerbread flavour is fairly strong but I enjoy it. its great having options to make them vegan and dairy free if you need to!Location

Ok but too sweet for me
I followed the recipe provided using the vegan option (bananas). The loaf turned out well and there was a strong gingerbread smell. Unfortunately it was too sweet for me and I didn’t quite enjoy it. I probably wouldn’t get it again.Location
