Thick, crusty, well-toasted bread, and soft, ripe avocado — it’s a match made in heaven! Avocado toast, or smashed avo, has exploded in popularity recently. It’s become a crowd favourite for brunch-goers all around Australia, and every cafe has its own unique twist on the delicious dish.

If you’re finding that your homemade avo toast is a bit blah, then look no further! We’ve put together five interesting ways to spruce up your avo toast — whether it’s for breakfast, brunch — or, really any time of the day!

How To Make The Perfect Avocado Toast!

First, we need to nail the base. 

  1. Pick an avocado that’s soft, but not super squishy. If it’s unripe, it won’t spread properly — if it’s too ripe, it’ll be mushy and brown on the inside. The perfect avocado will be able to handle a gentle squeeze!
  2. Slice your avocado down the centre and cut around the pit. Remove the pit and scoop out the avocado flesh into a small, separate bowl. 
  3. Mash it up with a fork, and if you want — you can add a splash of lemon juice (to slow down the browning process), and a pinch of salt and pepper. 
  4. Choose your favourite bread and toast to perfection. We suggest using thick-sliced, sturdy bread like sourdough or whole wheat to provide a solid base for the avocado. 
  5. Spread your mashed avo (or sliced avo) onto your bread — and that’s it!

Adding cherry tomatoes to avocado toast is a no-brainer. It’s simple, delicious, and super quick to prepare. In this recipe, the sweetness of the cherry tomatoes and the sharpness of the balsamic vinegar help to cut through the richness of the avocado. 

Simply chop up a small handful of ripe cherry tomatoes and a couple sprigs of parsley, then drizzle with balsamic vinegar (or glaze) and serve!

This is another super simple recipe to get your creative juices flowing! Crunchy, roasted chickpeas are absolutely delicious on top of soft avocado. 

  • Take a can of chickpeas, then strain, rinse, and pat dry. 
  • Mix with olive oil, salt, paprika and chuck onto a lined baking tray. 
  • Bake for 20-30 minutes at 230°C, or until golden and crispy!

The best part about roasting chickpeas is that you can add anything you want to them. For a spicy twist, add chilli powder! You could even do a mild variation using garlic and onion powder.

  • Add in a small amount of chopped garlic and basil to your base avocado mash. 
  • Wash and chop mushrooms, and then cook in olive oil until tender and delicious.
  • Toast some pine nuts in a dry pan until golden — don’t let them burn!

  • Peel fresh carrots into ribbons to mimic the look of salmon.
  • Add a small amount of diced red onion, capers and chives.
  • Lastly, add a generous sprinkle of your DIY everything seasoning!

This variation has the perfect balance of flavours and textures, and ‘everything’ seasoning is practically amazing on anything!
